How the calculation works

USDA guidance allows approximately 24 hours for each 4–5 lb in a refrigerator at 40°F (4°C) or below. This planner uses 4 lb per day and rounds upward to whole days.

Cold-water thawing uses approximately 30 minutes per pound. Keep the bird in leak-proof wrapping, fully submerged in cold tap water; replace the water every 30 minutes.

Cook immediately after cold-water thawing. Refrigerator-thawed turkey may stay refrigerated for 1–2 days before cooking. Do not thaw at room temperature.

Worked example

A 16 lb turkey needs a planning allowance of 4 refrigerator days. The cold-water estimate is 8 hours, with fresh cold water every 30 minutes and immediate cooking afterward.
